Tea from olive leaves is still little known, although the beneficial properties of the olive itself and the oil is known to most people. Since the 1960s, the effects of olive leaves have been scientifically researched, and there are now many positive testimonials about the effects of the ingredients of the olive leaf.

The active ingredient in the leaves of the olive tree is called iridoids, (one of them is oleuropein) the substance that makes the leaves bitter, because with it the olive tree protects itself from damage caused by insects and bacteria. It thus strengthens the tree's resistance - and so will yours, if you nibble the leaves. The bitter substances turn into a feeling of sweetness after a while in the mouth.

Oleuropein is particularly concentrated in olive leaves.
The leaves are cut by hand, hung to dry in a shady, airy place where they remain for 4 to 8 weeks.
The tea has a pleasant mild, aromatic, slightly bitter, 'green' taste. The brewed tea has a golden yellow color and an almost imperceptible sweetness.

Preparation of olive leaves (if you do not want to nibble them)
Pour boiling water over 1 - 2 teaspoons of crushed olive leaves per cup.
Let steep covered for 10 - 15 minutes and then strain.
Olive leaf tea is also suitable as iced tea, mix it with mineral water, lemon juice or fruit juices.
With 1 liter of water:
When it starts to boil add 2 tablespoons of olive leaves, simmer for only 1 minute.
Drink 3-4 cups per day.
The finished tea can be stored in the refrigerator for several days, preferably in the Flaska. Do not boil or store in aluminum pots or pots containing tin.  Sweeten with erythritol or even better with yacon syrup probiotic.
