As a spice, cinnamon is so fine in flavor that some would like to eat it daily. And it would be a good choice for your health.
Numerous foods and recipes contain large quantities of the stimulating spice. For example, in the nerves treatment biscuits of Hildegard von Bingen the recipe is 45 grams of cinnamon on 1 kilogram of flour.

Cinnamon is the dried bark of young branches or trunks of the cinnamon tree, which thrives only in tropical climates. There are about 270 cinnamon species worldwide, only two of which are important to us.
One is the real cinnamon, the other is a completely different plant with different origins, which is sold in many stores under the name of "cinnamon".
One plant is the real cinnamon (Cinnamomum zeylanicum), Ceylon cinnamon or Kaneel and is originally from Ceylon, today's Sri Lanka.
The other plant is Chinese cinnamon (Cinnamomum aromaticum) or cassia and comes from southern China.
The real cinnamon bark is tender and thin, tastes better and is much healthier than Chinese cassia, because the coumarin content of real cinnamon is much lower than that of Chinese cassia, which has thick bark pieces, other flavorings and a much higher coumarin content.
And exactly this Chinese cinnamon is almost everywhere in the food trade. So be aware and read the labels carfully

Real cinnamon is rarer and is characterized by a finer aroma.

Real cinnamon contains (in addition to the cinnamon aldehyde) up to ten percent eugenol, the main ingredient in the essential oil of the clove. And don't we love to combine these two health enhancing powders? Cinnamon and cloves make a good match in a lot of recipes.
This is not the case with Chinese cassia, so you better enjoy the Real Cinnamon with its multi-faceted, floral flavor.

Do not worry about coumarin content in Real Cinnamon

Coumarin is a natural ingredient in both cinnamon and cassia bark, but in real cinnamon its percentage is negligible: 0.0008 percent, or 0.8 milligrams, is found in 100 grams of real cinnamon bark.
The bark of Chinese cassia contains on average about 30 milligrams of coumarin per 100 grams and more.

Less coumarin, more intense aroma

As coumarin is found not only in cassia bark, but also in other plants such as the woodruff, the European Food Safety Authority (EFSA) has set Tolerable Daily Impact (TDI) limits: up to 0.1 milligrams of coumarin per kilogram body weight can be taken daily for an indefinite period. Seven milligrams is the dose for a 70-kilogram man. This is equivalent to about a kilogram of Real Cinnamon bark, but only 25 grams of Chinese cassia. Should you always eat larger quantities of Chinese cassia powder, you would easier get to this critical value.
